    Pineapple Upside Down Cupcakes

    Around this time every year, my mom ends up either baking a pineapple upside down cake or buying one from the local grocery store for my dad’s birthday. ¬†This is his favorite cake in the entire world and he would eat it for breakfast, lunch and dinner…if my mom would let him :)

    A few days back, I found a recipe to make pineapple upside down CUPCAKES!  I want to try this out soon, and of course my dad will be the judge to see if this recipe beats what we traditionally have.  I like the easy presentation of the cake in the cupcake liners for this type of cake since usually becomes a little bit of a mess on the cake plate. My dad will argue with me that this is the best part of the cake!

    Thanks to FamilyFun Magazine for the recipe and the step-by-step instructions to make these cute cupcakes.  They do not use cupcake liners but it is a quick step to do in the beginning while your oven is heating up.

    This recipe will make 12 cupcakes – just enough for a family birthday party or dessert for every meal for my dad for a week ūüėČ

    A little tip to make this recipe even faster to make is to use yellow cake mix instead of making your batter from scratch. If you use cake mix, you can also double your recipe to make 24 cupcakes since you will more batter.

    Just a note: this recipe does not require the use of the cupcake liners. Just flip the muffin pan over to release each cupcake and display on a nice dessert platter…or you can add the cupcake liners so each person can have fun unwrapping their own dessert. I’m going to use fun decorative cupcake liners to match the decor of the party.

    I am very excited to share our blog feature by Oh Baby! Custom Shower Decor! 

    I worked with Sandi, from Oh Baby! Custom Shower Decor, to customize edible cookie toppers to match the decor and theme of the upcoming baby shower she hosted for her friend this past weekend. ¬†They did a Japanese cherry blossom theme in pink and grey… and it turned out amazing! ¬†Here are a few photos that were taken at her event!

    Happy Tuesday!  We are finally having a beautiful summer day today with no humidity.  All of the windows are open and excited to take my daughter to the park this afternoon.


    My inspiration for today’s blog is jungle safari. I finished up a baby jungle safari cupcake topper order this morning and wanted to find cute ideas to go with this theme.




    Monkey Cupcakes

    Love the monkey cupcakes and they look so easy to make!  Start with your traditional cupcake, frost with chocolate icing and then add vanilla cookies to make the mouth area Split the mini nutter butter cookies in half for the ears.  Use black decorating gel to add the nose and eyes. Finally, use red decorating gel to create a smile!  The kids are going to love these!

    I found this great site,, with a fun collection of temporary tattoos perfect for favor bag treats for all ages.  These tattoos use colorful designs combined with printed words.  There so many different tattoos to choose from and the best part is the tattoos engages children to make connections between letters and sounds.

    Jungle Pals Balloons

    A party is only complete if you have balloons and lots of them.  How about these mylar gallons from There are 4 gallons in this balloon bouquet and features an elephant, monkey (my favorite), lion, and jungle birthday balloons. Also included is a balloon anchor weight.  Combine these with some animal print (leopard or zebra) balloons from your local party store and your party will come together very quickly!

    There are so many creative and fun decorations and activities to make for a pirates themed party.  All coordinating balloons, plates, napkins, cups and utensils can be found at






    To get the pirate theme started, find some great clipart graphics to make your own invitations to send to your child’s special guests.



    Treasure Maps & Treasure Chest Favors

    Instead of using favor bags for the kids, use treasure chest filled with candy, gold coins and even add an eye patch. ¬†But the best part is to create treasure maps for the kids (and adults) to find the treats! ¬†You can create your own map on construction paper. ¬†Draw the layout of the party with markers and make a few different “X” marks the spot areas so everyone can find their own treasure chest. Give each party guest a map and let them find the treats! I’ve done this so many times for friends and family to find their birthday presents.


    Party Snacks

    In the photo collage above, a great party food are the “eye ball” deviled eggs! Prepare your deviled eggs as usual. The trick to make these look like eye balls is adding a sliced olive to make the eye and also roasted red pepper to make the eye look bloodshot. Display on a platter on top of some black beans!

    Cupcake Shaped Rice Krispies Treats


    One of the cute ideas I made for my daughter’s birthday party were cupcake shaped rice krispies treats dipped in chocolate. ¬†What a great response to this quick and easy treat! ¬†I had so many people ask me how I made them and I’m even making some more this weekend for our friend who is having a birthday party for her daughter.

    A little twist on a classic treat!



    These treats are easy to make with very few ingredients.

    What you’ll need:

    • Cupcake Cookie Cutter (or any shaped cookie cutter to match your party theme)
    • 1 1/2 cups White Chocolate Chips
    • 10 oz. package Mini Marshmallows
    • 1 tbsp. Vegetable Oil
    • 3 tbsp. Butter or Margarine
    • 6 cups Rice Krispies Cereal
    • Sprinkles (optional)
    1. In large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Add rice krispies cereal. Stir until well coated.
    2. Using buttered spatula (or wax paper), press mixture into 13×9 inch pan coated with cooking spray. Cool.
    3. Cut cupcake shapes using the cookie cutter.


    4. In small microwave-safe bowl, combine chocolate and oil. Microwave on high for 1 to 1-1/2 minutes, stirring every 30 seconds.

    5. Coat the top of the treats with the melted chocolate using a spoon.


    6. Decorate with sprinkles or other candy before the chocolate starts to set.  Any remaining chocolate can be put into a piping bag to outline the bottom of the cupcake to look like the cupcake liner.





    7. Place the treats on wax paper. Refrigerate until chocolate is set.



    Once chocolate is set, remove from refrigerator and place on a decorative platter for your party! ENJOY ūüėČ

    This recipes makes 18 cupcake shaped treats.  If you use a smaller cookie cutter, than you can create more from this one batch recipe.

    The possibilities are endless with this quick treat. ¬†There are so many different cooke cutter shapes, you can use this recipe for so many occasions! ¬†…birthday, baby shower, bridal shower, retirement, treats for the office or just because!
