SO EXCITED…It’s party planning time! My favorite time of year!

My daughter’s birthday party is 2 weeks away and that means that I can officially start working on some of the cute ideas I have been collecting over the past few months {SO EXCITED}… We already sent out the party invitations and decided to make her second birthday an ice cream themed party.

Here are the super cute invitations I made for her party…I found the “build an ice cream” clipart on Etsy for $3 and started to design the invitations around the ice cream cone. I collected a few ideas for invitations and I combined a little piece of each one into one cute + sweet invitation for the birthday girl turning 2! I uploaded the designs to Vistaprint to have them professionally printed. It was super cheap since Vistaprint had a sale at the time for free invitations. {PERFECT TIMING}

We’re having the party at a local park so the kids can play on the playgrounds with the party pavilion right next to it.  We had her first birthday party at the house last year with close family and friends. This year, I wanted something a little bigger but less stressful where everyone can have fun {kids + adults} enjoying some great friends, family and food.

For the envelope, I carried the ice cream clipart onto the front of the envelope along with a festive “CELEBRATE” stamp.  USPS also had Pixar movie character stamps, too but though this one worked nicer.

And for the back, just a simple custom designed Sweet’n Tots glossy sticker. At Sweet’n Tots, you can design your own “Sweet’n Tot” to look just like your little one.  I created the artwork to look just like Grace and it turned out great. I added a sweet matching polka dots border and her name to complete the invitation design!

This is the just the beginning of the numerous posts to come about my daughter’s birthday party in August and I cannot wait to share more details of her party decor and yummy, creative food and goodies!

You just need a few items to make this and it took me about 30 minutes! {Even when taking photos for the step by step tutorial} I’m not a great seamstress so this NO sew project was right up my alley!

I had an amazing opportunity to review a super cute + fun toddler costume from Costume Discounters. First, I have to say how impressed I was with the large selection of costumes, not only for toddlers, but for infants, boys, girls and adults!

My daughter is turning 2 in a month and she is obsessed with Elmo!  When I saw the Sesame Street Frilly Elmo toddler costume, I knew she would love it!  Many of the costumes for babies are also available in toddler, girls, boy and adults sizes so the whole family can dress up to match for Halloween…I thought this was a great idea! I placed my order for the Small (2T) costume and shipping was super quick.  It arrived safely in only 2 days!

The Sesame Street Frilly Elmo includes the dress and Elmo headband. For Halloween, just add some tights, sparkly red shoes and a long sleeve shirt and my daughter will be all set for trick-or-treating!  The craftsmanship of the costume is high and it was a great fit for my daughter. I will recommend this site to all of my mommy friends for Halloween.

My daughter is just about to turn 2 and she is having the worst time with teething {second year molars are the worst} and many mommy readers can understand the constant crankiness.  Unfortunately, I do not have a great photo of her in the costume yet…but I will update the blog post shortly to show her in the costume.  I do have a photo from the website showing a super cute little girl in the same costume just so all of our readers can see the cuteness 😉

I love to bake and I wanted to try a cute idea for cupcakes I found on Pinterest a little bit ago.  The pin was of cupcakes that resembled watermelons and I thought this would be a perfect treat for the 4th of July BBQs as well as for my daughter’s school party.

Instead of making standard size cupcakes, I made mini cupcakes and boy did we have A LOT of them!   It was super easy to make and I just used regular box cake mix and store bought frosting to save some time.

{YUM} Mini Watermelon Cupcakes

{WHAT YOU’LL NEED}

  • 1 Box of White Cake Mix
  • 2 Containers of White Frosting
  • 1 Bag Mini Chocolate Chips
  • Rose (or No-Taste Red) Wilton’s Icing Color
  • Leaf Green Wilton’s Icing Color
  • Yellow Wilton’s Icing Color
  • Piping Bag + Tip for Frosting
  • Mini White Cupcake Liners

 

{HOW TO MAKE THESE SUPER CUTE CUPCAKES}

Let me first say this is so easy to make and decorate so don’t be scared to try yourself!  This idea is perfect for birthday parties, baby showers, summer BBQs and so many more events.

I followed the instructions on the cake mix box to preheat my oven to 325, combined all the ingredients to make the cake batter, and then lined the mini cupcake pans with white mini cupcake liners.  I then added a tiny bit of food coloring to create the bright pink/red color to look like the red of the watermelon. I used both Wilton’s ROSE and NO-TASTE red coloring to create this color.  After the batter is colored, I added about 1 cup of mini chocolate chips into the batter to create the look of the watermelon seeds when the cupcake is bitten. And that’s it for the cake batter! I added the batter to the cupcake liners and put them in the oven to bake.

{NOTE: If you are making standard cupcakes, I do suggest using regular chocolate chips for a nice ratio of cake to chips}

I baked the mini cupcakes for about 14 minutes but this can vary depending on the type of cupcake pans used and your oven.  I love mini cupcakes since they are a 2 bite treat that doesn’t leave everyone at the party feeling so guilty for eating dessert.  Just beware that if you decide to use all of the cake mix, you will make about 7 dozen mini cupcakes!

Now…the fun part!  While your cupcakes are baking, you can mix your frosting to match the green of the watermelon.  I used 2 containers of white store bought frosting to save some time but you can always make your own buttercream frosting.  Scoop both containers of frosting into a mixing bowl and then add your food coloring.  I added Wilton’s leaf green and Wilton’s yellow to create a bright, neon green color. Again, any type of food coloring will work but I have the best results with Wilton products.

After mixing the frosting to green color, add your frosting to your piping bag and pipe away!  I use a round tip (about 1/2″ in diameter) but a star tip works nicely, too.  Add a few mini chocolate chips to the top of each mini cupcake and you’ve created a cute + fun summer cupcake!
