Pineapple Upside Down Cupcakes

Around this time every year, my mom ends up either baking a pineapple upside down cake or buying one from the local grocery store for my dad’s birthday.  This is his favorite cake in the entire world and he would eat it for breakfast, lunch and dinner…if my mom would let him :)

A few days back, I found a recipe to make pineapple upside down CUPCAKES!  I want to try this out soon, and of course my dad will be the judge to see if this recipe beats what we traditionally have.  I like the easy presentation of the cake in the cupcake liners for this type of cake since usually becomes a little bit of a mess on the cake plate. My dad will argue with me that this is the best part of the cake!

Thanks to FamilyFun Magazine for the recipe and the step-by-step instructions to make these cute cupcakes.  They do not use cupcake liners but it is a quick step to do in the beginning while your oven is heating up.

This recipe will make 12 cupcakes – just enough for a family birthday party or dessert for every meal for my dad for a week ;)

A little tip to make this recipe even faster to make is to use yellow cake mix instead of making your batter from scratch. If you use cake mix, you can also double your recipe to make 24 cupcakes since you will more batter.

Just a note: this recipe does not require the use of the cupcake liners. Just flip the muffin pan over to release each cupcake and display on a nice dessert platter…or you can add the cupcake liners so each person can have fun unwrapping their own dessert. I’m going to use fun decorative cupcake liners to match the decor of the party.

August 1st is Raspberry Cream Pie Day!

 

Raspberries are one of the gems of summer. Sweet and tasty, it is loved by millions of people (and birds, too!) With the arrival of ripe berries, it is time to make and enjoy some of your favorite dessert treats. High on the list for raspberry lovers, is raspberry cream pie.

I have never tasted raspberry cream pie but… you can still make this a super raspberry day. Go out and pick your own berries. Then, make a raspberry cream pie. Better still, make one for you, and another to give away to a family member, a neighbor, or a friend. Then, dig in and eat a piece of pie….Yummmm! Here is a great recipe from Bon Appetit for Black Bottom Raspberry Cream Pie (photo above)- The secret to the crust is a layer of chocolate pudding—plus chocolate cookies.

I love finding creative alternatives to the holiday. These made me laugh when I googled “funny raspberry pictures”…might make a few tonight to make my daughter laugh!

I saw this cute kid’s apron that reminds me of a raspberry cream pie because of the colors. Lush violets and soft pink made this apron so cute!

July 29th is Nation Lasagna Day!

 

First, I cannot believe July is almost over…where did the summer go? Anyways, Happy National Lasagna Day!

I have great memories of my grandmom making lasagna for Sunday dinners as well as for every holiday.  Sure, it’s July. Its hot and humid. Cooking up a pan of lasagna will make the kitchen hotter but as it cooks, the smell will waft throughout the house. Your mouth will begin to water. When dinner time arrives, you will have a huge appetite for a huge piece of lasagna.

 

Lasagna is a favorite Italian dish. In between multiple layers of lasagna pasta are generous amounts of tomato sauce, cheeses, and sometimes hamburger and/or Italian sausage. Its the favorite Italian dish of millions of Americans.

 

I could eat pasta any time of the day but what about for dessert? 

 

 

 

 

 

Thank you to VeggieTeens for these amazing “TV Dinner” cupcakes.  The peas and carrots on the cupcake are actually green runts and orange starburst cut into quarters! How creative!

How Large Is The Worlds Biggest Lasagna?

I’m not sure of the record for real lasagna but for a cake in the shape of lasagna, it’s 28 feet! Sweet E’s Bakery submitted their cake to the Guinness Book of World Records and hope to be a part of history in the very near future! The actual noodles and basil leaves were made out of fondant while the marinara sauce was made from red velvet cake, red frosting and red chocolate chunks. The melted cheese on top was made of fondant and chocolate which was airbrushed to look yellow. After 72 hours, the cake was complete weighing in at 150 pounds.

July 26th is All or Nothing Day!

 

Happy All or Nothing DayHow will your day go? Will you have it all….or nothing. When thinking of what All or Nothing Day really means it is a day of extremes! Go Big or Go Home!

If you’re a gambler, it’s a day to go for broke. A little drastic day, perhaps!

 

This is one extreme gambling cake!  Look at all of that detail.  I would hate to be the person cut and serve at the party…it’s too beautiful to eat!

 

Have you ever googled…”extreme cakes”?

Well, I did this morning to find interesting cakes and cupcake images for this holiday.  Did you know the world’s largest cake weighs 15,032 pounds???  I wonder how long it took to make  …and decorate?

 

 

 

What about an over the top wedding cake?

Maybe a full size replica of the bride…

There is even a slideshow on CNN portraying thiscake on the day of the wedding!  There’s definitely no grey area in how you spend this day.

 

One of my favorite shows on the Food Network is Food Network Challenge and by far my favorite pastry chef and cake decorator is Bronwen Weber. Her cakes are amazing and truly an inspiration when I bake. The show always has an extreme twist thrown in…definitely an all or nothing competition.

Back to Junk Food Day… 

 

To some people, every day is Junk Food Day. For the rest of us, National Junk Food Day is an opportunity to guiltlessly eat your favorite junk food.

 

 

Dietitians will tell you that junk food is any food that contains little nutritional value. We also include foods that are high in salts, fats, and sugars. In other words, junk food is all that tasty stuff that the dietitians, and Mom, consider to be bad for us.

On Junk Food Day, you get to eat anything you want. Eat any amounts that you want, too. Tomorrow, however, it’s back to a healthy diet.

You won’t find a paintbrush in Jason Mecier’s studio. The mosaic portrait artist’s representations of famous faces — including Rosie O’Donnell, Rachael Ray, and Jerry Seinfeld — are made out of candy, potato chips, cookies, and other edible goodies.

 


Today is the first day of the new blog and it’s NATIONAL CAVIAR DAY!

Could it get any more bizarre for my first “holiday” to blog about? Caviar is salted fish eggs, or “roe”. It is considered a delicacy. There’s red caviar and black caviar, along with other colors. Black is considered the best. Perhaps you should do a taste test.

When I think of caviar, I think of sushi. I could eat sushi any day of the week and any time of the day: breakfast, lunch, dinner.

So, this photo looks like what you would normally get when you eat at a sushi restaurant, right? WRONG! It is actually cupcakes! Yes, cupcakes. I am so amazed by the detail work for each one.

You can tell that these are cupcakes but what a great idea! Or maybe a sushi cake?

Last night I found an interesting website with unique and VERY funny, random days of celebration – not sure where they all came from but still interesting. Yesterday was “Peach Ice Cream Day” and each “holiday” has a brief description and note of origin.

So… my new blog idea is to post each day a random holiday for that date and relate it to cakes or cupcakes or something completely random…just like the holiday.
