I love to bake and I wanted to try a cute idea for cupcakes I found on Pinterest a little bit ago.  The pin was of cupcakes that resembled watermelons and I thought this would be a perfect treat for the 4th of July BBQs as well as for my daughter’s school party.

Instead of making standard size cupcakes, I made mini cupcakes and boy did we have A LOT of them!   It was super easy to make and I just used regular box cake mix and store bought frosting to save some time.

{YUM} Mini Watermelon Cupcakes


  • 1 Box of White Cake Mix
  • 2 Containers of White Frosting
  • 1 Bag Mini Chocolate Chips
  • Rose (or No-Taste Red) Wilton’s Icing Color
  • Leaf Green Wilton’s Icing Color
  • Yellow Wilton’s Icing Color
  • Piping Bag + Tip for Frosting
  • Mini White Cupcake Liners



Let me first say this is so easy to make and decorate so don’t be scared to try yourself!  This idea is perfect for birthday parties, baby showers, summer BBQs and so many more events.

I followed the instructions on the cake mix box to preheat my oven to 325, combined all the ingredients to make the cake batter, and then lined the mini cupcake pans with white mini cupcake liners.  I then added a tiny bit of food coloring to create the bright pink/red color to look like the red of the watermelon. I used both Wilton’s ROSE and NO-TASTE red coloring to create this color.  After the batter is colored, I added about 1 cup of mini chocolate chips into the batter to create the look of the watermelon seeds when the cupcake is bitten. And that’s it for the cake batter! I added the batter to the cupcake liners and put them in the oven to bake.

{NOTE: If you are making standard cupcakes, I do suggest using regular chocolate chips for a nice ratio of cake to chips}

All Ready for the Oven!


I baked the mini cupcakes for about 14 minutes but this can vary depending on the type of cupcake pans used and your oven.  I love mini cupcakes since they are a 2 bite treat that doesn’t leave everyone at the party feeling so guilty for eating dessert.  Just beware that if you decide to use all of the cake mix, you will make about 7 dozen mini cupcakes!

Now…the fun part!  While your cupcakes are baking, you can mix your frosting to match the green of the watermelon.  I used 2 containers of white store bought frosting to save some time but you can always make your own buttercream frosting.  Scoop both containers of frosting into a mixing bowl and then add your food coloring.  I added Wilton’s leaf green and Wilton’s yellow to create a bright, neon green color. Again, any type of food coloring will work but I have the best results with Wilton products.

After mixing the frosting to green color, add your frosting to your piping bag and pipe away!  I use a round tip (about 1/2″ in diameter) but a star tip works nicely, too.  Add a few mini chocolate chips to the top of each mini cupcake and you’ve created a cute + fun summer cupcake!

Raspberries are one of the gems of summer. Sweet and tasty, it is loved by millions of people (and birds, too!) With the arrival of ripe berries, it is time to make and enjoy some of your favorite dessert treats. High on the list for raspberry lovers, is raspberry cream pie.

I have never tasted raspberry cream pie but… you can still make this a super raspberry day. Go out and pick your own berries. Then, make a raspberry cream pie. Better still, make one for you, and another to give away to a family member, a neighbor, or a friend. Then, dig in and eat a piece of pie….Yummmm! I love finding creative alternatives to the holiday. These made me laugh when I googled “funny raspberry pictures”…might make a few tonight to make my daughter laugh!

I saw this cute kid’s apron that reminds me of a raspberry cream pie because of the colors. Lush violets and soft pink made this apron so cute!
